Stareos (from the Stars restaurant in San Francisco)
Yield: 1 1/2 dozen cookies

Cookies:
8 ounces cold sweet cream butter
1/2 cup sugar
1 1/2 cups flour
Pinch salt
1/2 cup cocoa powder, sifted

The filling:
1 cup mascarpone
1 tablespoon sugar
1/4 teaspoon vanilla extract

To make the chocolate shortbread:
Combine the butter and sugar in the bowl of an electric mixer. Mix on low speed for 15 seconds, using the paddle attachment. Add the flour, salt, and cocoa powder and continue mixing on low speed for 3 to 5 minutes, until the dough comes together. It will look dry just before it comes together.

Put the dough on a lightly floured board and roll it out 1/4 inch thick. With a 2-inch star cutter, cut out the cookies. Chill them for 1 hour in the freezer. Line a baking sheet with parchment paper and place the cookies so they are not touching on the pan.

Preheat the oven to 250 degrees.

Bake the shortbread for about 1 hour, until firm.

To make the filling:
Combine the mascarpone, sugar, and vanilla extract in a small bowl.

To assemble:
Spread about 1 tablespoon of the mascarpone cream filling on 18 of the cookies. Put the remaining uncoated cookies on top of the creamed cookies, making a "sandwich".

Hazelnut Crisps
from Local Flavor by Deborah Madison

1 cup toasted hazelnuts
1 Tbsp sugar
? cup unsalted butter
? cup light brown sugar, packed
? tsp sea salt
1 tsp vanilla extract
1 egg yolk
1 ? cups all-purpose flour

Grind the hazelnuts in a food processor with the white sugar until fine, but leave a few chunks scattered throughout.

Cream the butter and brown sugar with the salt until light and fluffy, then add the vanilla and egg yolk. Stir in the hazelnuts and flour.

Roughly shape the dough into a log, wrap in wax paper or plastic wrap, then shape the log until it is about 1 ? inches in diameter. Refrigerate for at least one hour, preferably longer.

Preheat the oven to 350 °F. Cut the log into ?- to 1/3-inch thick slices and place on an ungreased baking sheet at least 2 inches apart. Bake until lightly browned on top, about 15 minutes. Cool on racks.

Makes 2 dozen (or more)

Virginia Jimenez records an audio testimonial about inside the interactive exhibit of the Census National Road Tour Vehicle, "Confidential." 3,500 new citizens were naturalized today, January 8, 2010 at the Los Angeles Convention Center. Jimenez says she is honored to be a part of the day, and urges everyone that census participation is essential to bringing vital funding to their communities.

This is an index card to the 1885 naturalization record for my great grandfather Michael Tierney.

When searching for this records, I had a few possible matches but was able to confirm this was the correct one after receiving his New York Police Assignment card from the NYPD.

He was a policeman from 1886 - 1913, and the naturalization date on this index matches the one on that record.

Ok, playing around more with Windows Vista today and I have to say that I absolutely *love* the moving files functionality of Vista.

One of the problems that I have with my photographs is that frequently photo titles get reused. As many of my titles come from song lyrics or just thoughts that pop into my head when I view the photograph, I find myself frequently reusing titles. This is especially true if a title is one word. Discover, Good Times, Alive... you get the idea.

One of the things that I hated about XP and Mac OSX as well for that matter is that frequently I'd try to move my photos from my MacBook to my drobo after I uploaded them and I'd get a message reminding me that I already had a file with that name in the folder and would I like to replace the file or not replace it. The problem though was always that I didn't know if it was an actual physical dupe file or a different photograph using the same name.

Well now with Vista when it notifies me of this conflict, it actually shows me thumbnails of the photos in question and then gives me three choices. To replace the photo, not to move it, or to move it and give it a new title.

This one little thing makes it so much easier for me in helping to organize my photos. That, combined with easy photo keywording and keyword search from the Vista OS thus far make Vista look like a far better operating system than XP to me.

More details as I experiment more with the OS.

Not the most photogenic of locations, but it didn't linger long enough for me to risk moving. There's an odd double rainbow effect, which is either down to a very small separation between two distinct arcs, or my polarising filter.

Nutmeg Cheesecake
Ingredients:
2 std packages full fat cream cheese
? tsp + ? tspnutmeg
? tspvanilla extract
1/3 cup + ? cupwhite sugar
3 egg yolks
3 cups graham cracker crust
? cupmelted butter
? tspcayenne pepper

Method:

1.Preheat oven to 375°F. Line one 4-inch spring form pan (or 5 cake rings) with parchment paper.

2.In a bowl, combine graham cracker crust, ? cup of sugar, cayenne and butter and mix until well combined. Press graham cracker mixture into the bottom of the spring form pan or your cake rings (about ?-inch high) and put aside.

3.Using a food processor, combine cream cheese, sugar and vanilla extract until smooth and silky and fold in remaining ingredients. Spread filling evenly into spring form pan or rings, and bake for 45 minutes (25 minutes for ring molds). Cheesecake should be refrigerated for at least 2 hours before serving.

Dark Spiced Rum Sauce
Ingredients:
2 cups sugar
? cup water
? cup + ? cupheavy cream
2 Tbspmelted butter
2 Tbspdark spiced rum
1 tsprum extract
? tsp eachcinnamon, nutmeg, black pepper, grated ginger

1.In a medium sauce pan, add sugar, water, spiced rum, rum extract, cinnamon, nutmeg, black pepper, grated ginger. Stir and cook on medium-high heat until the sugar syrup starts to change colors around the outer edge to an amber-brownish color, or if using a candy thermometer, reaches 350°F.

2.Remove from heat immediately and using a wooden spoon or whisk, quickly stir everything to keep the sugar water from burning. Your simple syrup should be a golden ale-brown. As you continue to stir, pour in ? cup of warm heavy cream and melted butter. When the cream makes contact with the sugar water it will start bubbling violently. Continue to stir until the sugar crystallization dissolves. Finally, add ? cup of additional warm heavy cream (and rum) until caramel sauce is nice and smooth. Serve warm.

Tropical Fruit Salsa
Ingredients:
1/3 cup finely brunnoise mango
? cup finely brunnoise papaya
1/3 cup minced lychee fruit
? cup diced pineapple
1 tspgrated ginger
1 tsp white rum
1 tspmaple syrup
juice of 1 Tbsp of finely chopped lemon balm

Method:

1.Toss all ingredients together and allow to sit for 5 minutes before serving.


Cheesecake Stuffed French Toast

Ingredients:
2 cups10% cream
8 egg yolks
1 tsp vanilla extract
as requiredegg bread, thickly sliced

Method:

1.Preheat the oven to 375°F.

2.To make the custard batter, whisk cream, egg yolks and vanilla extract until well combined.

3.Smash your cheesecake - it can be chunky or smooth according to your taste. Nestle about 3 heaping tablespoons in the centre of two thick slices of egg bread.

4.Heat a pan with vegetable oil, over medium heat. Submerge cheesecake sandwich into the custard batter. Sear French toast on both sides and transfer to a baking sheet and bake for 8-9 minutes (until the filling is warm). Drizzle with dark spiced rum sauce and top with tropical fruit salsa. Serve immediately.
