Stareos (from the Stars restaurant in San Francisco)
Yield: 1 1/2 dozen cookies

Cookies:
8 ounces cold sweet cream butter
1/2 cup sugar
1 1/2 cups flour
Pinch salt
1/2 cup cocoa powder, sifted

The filling:
1 cup mascarpone
1 tablespoon sugar
1/4 teaspoon vanilla extract

To make the chocolate shortbread:
Combine the butter and sugar in the bowl of an electric mixer. Mix on low speed for 15 seconds, using the paddle attachment. Add the flour, salt, and cocoa powder and continue mixing on low speed for 3 to 5 minutes, until the dough comes together. It will look dry just before it comes together.

Put the dough on a lightly floured board and roll it out 1/4 inch thick. With a 2-inch star cutter, cut out the cookies. Chill them for 1 hour in the freezer. Line a baking sheet with parchment paper and place the cookies so they are not touching on the pan.

Preheat the oven to 250 degrees.

Bake the shortbread for about 1 hour, until firm.

To make the filling:
Combine the mascarpone, sugar, and vanilla extract in a small bowl.

To assemble:
Spread about 1 tablespoon of the mascarpone cream filling on 18 of the cookies. Put the remaining uncoated cookies on top of the creamed cookies, making a "sandwich".

Hazelnut Crisps
from Local Flavor by Deborah Madison

1 cup toasted hazelnuts
1 Tbsp sugar
? cup unsalted butter
? cup light brown sugar, packed
? tsp sea salt
1 tsp vanilla extract
1 egg yolk
1 ? cups all-purpose flour

Grind the hazelnuts in a food processor with the white sugar until fine, but leave a few chunks scattered throughout.

Cream the butter and brown sugar with the salt until light and fluffy, then add the vanilla and egg yolk. Stir in the hazelnuts and flour.

Roughly shape the dough into a log, wrap in wax paper or plastic wrap, then shape the log until it is about 1 ? inches in diameter. Refrigerate for at least one hour, preferably longer.

Preheat the oven to 350 °F. Cut the log into ?- to 1/3-inch thick slices and place on an ungreased baking sheet at least 2 inches apart. Bake until lightly browned on top, about 15 minutes. Cool on racks.

Makes 2 dozen (or more)

Nutmeg Cheesecake
Ingredients:
2 std packages full fat cream cheese
? tsp + ? tspnutmeg
? tspvanilla extract
1/3 cup + ? cupwhite sugar
3 egg yolks
3 cups graham cracker crust
? cupmelted butter
? tspcayenne pepper

Method:

1.Preheat oven to 375°F. Line one 4-inch spring form pan (or 5 cake rings) with parchment paper.

2.In a bowl, combine graham cracker crust, ? cup of sugar, cayenne and butter and mix until well combined. Press graham cracker mixture into the bottom of the spring form pan or your cake rings (about ?-inch high) and put aside.

3.Using a food processor, combine cream cheese, sugar and vanilla extract until smooth and silky and fold in remaining ingredients. Spread filling evenly into spring form pan or rings, and bake for 45 minutes (25 minutes for ring molds). Cheesecake should be refrigerated for at least 2 hours before serving.

Dark Spiced Rum Sauce
Ingredients:
2 cups sugar
? cup water
? cup + ? cupheavy cream
2 Tbspmelted butter
2 Tbspdark spiced rum
1 tsprum extract
? tsp eachcinnamon, nutmeg, black pepper, grated ginger

1.In a medium sauce pan, add sugar, water, spiced rum, rum extract, cinnamon, nutmeg, black pepper, grated ginger. Stir and cook on medium-high heat until the sugar syrup starts to change colors around the outer edge to an amber-brownish color, or if using a candy thermometer, reaches 350°F.

2.Remove from heat immediately and using a wooden spoon or whisk, quickly stir everything to keep the sugar water from burning. Your simple syrup should be a golden ale-brown. As you continue to stir, pour in ? cup of warm heavy cream and melted butter. When the cream makes contact with the sugar water it will start bubbling violently. Continue to stir until the sugar crystallization dissolves. Finally, add ? cup of additional warm heavy cream (and rum) until caramel sauce is nice and smooth. Serve warm.

Tropical Fruit Salsa
Ingredients:
1/3 cup finely brunnoise mango
? cup finely brunnoise papaya
1/3 cup minced lychee fruit
? cup diced pineapple
1 tspgrated ginger
1 tsp white rum
1 tspmaple syrup
juice of 1 Tbsp of finely chopped lemon balm

Method:

1.Toss all ingredients together and allow to sit for 5 minutes before serving.


Cheesecake Stuffed French Toast

Ingredients:
2 cups10% cream
8 egg yolks
1 tsp vanilla extract
as requiredegg bread, thickly sliced

Method:

1.Preheat the oven to 375°F.

2.To make the custard batter, whisk cream, egg yolks and vanilla extract until well combined.

3.Smash your cheesecake - it can be chunky or smooth according to your taste. Nestle about 3 heaping tablespoons in the centre of two thick slices of egg bread.

4.Heat a pan with vegetable oil, over medium heat. Submerge cheesecake sandwich into the custard batter. Sear French toast on both sides and transfer to a baking sheet and bake for 8-9 minutes (until the filling is warm). Drizzle with dark spiced rum sauce and top with tropical fruit salsa. Serve immediately.

CGA CDC's 'Week of the Child' Kite Flying





The Coast Guard Academy Child Development Center helped raise awareness for the Week of the Young Child, April 11th -17th and Month of the Military Child with a family dinner at the Mystic Aquarium and a kite-flying event at the Coast Guard Academy.

The theme for this year is “Early Years are Learning Years, Children Soar with Quality Early Care and Education!”

The Week of the Young Child is an annual celebration sponsored by the National Association for the Education of Young Children. The purpose of the week is to focus public attention on the needs of young children and their families and to recognize the early childhood programs and services that meet those needs. The Academy CDC also includes special recognition to the military children during this month.

The idea to use kites came from the NAEYC logo used to promote and celebrate Week of the Young Child. They had created a kite with the phrase, “Bring Communities Together For Children … Children Bring Communities Together.”

A committee of parents and teachers formed and came up with many ideas centered around kites and involving the families. We passed out small kite pins to the parents to share at their worksite and hung small kites in the hallway decorated by and representing each family. Each idea was created to spread the message about the importance of early care and education. Because we are a part of a larger community here at the Coast Guard Academy, it was easy to spread the enthusiasm and one of our Snack Bar cooks even offered a special lunch for families and children immediately following our kite-flying event.

The Academy CDC serves many children of military parents in the local southeastern Connecticut area (Coast Guard, Navy, Air Force, Army and Marine families). Parent involvement is key in the center’s success, and celebrating the Week of the Young Child provides the perfect time to invite our parents to celebrate the children and the importance of the family. Some of our children’s parents were unable to share in this wonderful event due to the importance of their work, such as our deployed National Guard and Navy parents. Some of the Coast Guard parents serve on the Coast Guard Cutter Eagle. Regardless of duty assignment, the distance of separation is well known to military families. For those parents, we take photos of every event and photos of our children’s activities in school and share them via the internet.

The Child Development Center is accredited by the National Academy of Early Childhood Programs. Built in 1993, the program provides quality care and early childhood experiences for young children ages 6 weeks to 5 years old.

INGREDIENTS
1 can (8 oz) Pillsbury® Place ’N Bake® refrigerated crescent rounds (8 rounds) or 1 can (8 oz) Pillsbury® refrigerated crescent dinner rolls
1/4 cup Smucker's® Apricot Preserves
1/2 teaspoon finely chopped crystallized ginger
2 oz cream cheese, softened (1/4 cup)
1 tablespoon sugar
1 1/2 teaspoons Pillsbury BEST® All Purpose Flour
1/4 teaspoon vanilla
1 EGGLAND’S BEST egg
1 tablespoon water
1/4 cup Fisher® Chef’s Naturals® Natural Sliced Almonds

DIRECTIONS
1. Heat oven to 375°F. If using crescent rounds, remove from package, separate into 8 rounds. If using crescent rolls, remove from package, but do not unroll. Using serrated knife, cut roll into 8 rounds; carefully separate rounds. On ungreased large cookie sheet, place 2 rounds side by side; press joining edges together to form figure-eight shape. Press each round until 3 inches in diameter and about 1/4 inch thick. Press 1 1/2 inch indentation in center of each round. Repeat with remaining rounds to make 4 figure-eights, placing 3 inches apart on cookie sheet.
2. In small bowl, mix preserves and ginger. In another small bowl, stir cream cheese, sugar, flour and vanilla until smooth.
3. Fill 1 indentation on each figure-eight with 1 tablespoon preserves mixture. Fill other indentation on each figure-eight with 1 rounded tablespoon cheese mixture.
4. In small bowl, beat egg and water with wire whisk or fork until well blended. Carefully brush edge of dough with egg mixture; sprinkle with almonds. Bake 10 to 14 minutes or until light golden brown. Cool 10 minutes before serving.

Here it is:
2 cups whole wheat pastry flour
1/4 cup raw sugar
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon nutmeg
1/2 cup Earth Balance
1/2 cup pumpkin
2 tbsp ground Flax Seed in 2 tbsp water for 1 egg
1 tablespoon vanilla
1/4 cup chopped walnuts

Turn oven on to 375F. In a large bowl combine flour, sugar baking power, baking soda, salt, cinnamon, ginger and nutmeg. Cut the margarine into the dry mixture using a fork or pastry cutter. Add walnuts.
In a small bowl, beat together the pumpkin, vanilla and flax seed. Pour into dry mixture and combine. Using your hands fold together until you can form a ball, then gently pat into a disc.
Cut the disc in half, then in quarters and finally in eighths. Move each triangle onto a parchment lined cookie sheet.
Bake for 17 minutes. Cool.
